2019 Cabernet Sauvignon

Our Cabernet Sauvignon grows in a gravelly clay loam soil on a southern-facing slope. We harvest at the pinnacle of phenolic ripeness to ensure a lush, concentrated, and structured red wine that will age for over a decade. We manually sort the fruit for quality, and ferment in stainless steel tanks for an extended period. The young wine then ages twenty-two months in French oak barrels, 50% new. On the palate -- With a plush mouthfeel of stewed mixed berries, expressive stone fruit and Italian plum, dried red currants, and mellow green herbs and spices, bay leaf, and dark mocha on the finish.
100% Cabernet Sauvignon. 450 cases produced. Bottled by hand at the winery.
